5. Pies

My mother-in-law, Sylvia, always made her husband’s (Jim) favorite pie…coconut creme. In honor of the 20 years I was so blessed to have her be a part of my life, sharing this recipe is a tribute to a wonderful cook and mother-in-law who will always have a special place in my heart!

Sylvia Reinagel’s Coconut Cream Pie

1/3 cup pastry flour 1 Tablespoon butter

1/4 teaspoon salt 2 cups milk

1/2 cup sugar 3 egg yolks

1 cup coconut 1 teaspoon vanilla

Mix sugar, salt, and flour; add milk. Cook in double boiler until mixture has thickened, stirring constantly. Cover and cook for 15 minutes. Add slightly beaten egg yolks and butter. Continue cooking 3 minutes. Remove from heat. Add coconut and vanilla. Cool. Pour into baked pie shell and cover with meringue.
